Hi everyone! Happy Humpday! Well today flew by, so that it a whole better for me that the last two that seemed to be forever! I am having a bottomless pit day, I think it may have something to do with my nonexistent appetite the last two days due to stress.

When you are stressed does your appetite increase or decrease?

It is so different for everyone, for me it is that later.

I think my body finally said enough is enough and brought my appetite back in full force.

Around 10:30 I had a fruit leather, I really like this flavor. It is my favorite of all that I tried.

Lunch was the other half of my soup from last night.

and a side salad with spring mix, carrots, olives, peppers, tomatoes and cucumbers. It topped it with a little balsamic vinaigrette.

Think my soup container is a little big? HA! Soup was just as good the second time around :)

Look at this little guy that I planted to keep on my desk.

It is going to be Black Eye Susans! I got it at Target for $1 this weekend, we will see how it works out. I hope they grow…brighten up my workday!

I was hungry again around 3pm, so I had this exciting snack:

This is my favorite bar right now! I know that is a BOLD statement, but it is true!

Look at that yumminess! I am thinking this will serve as some great fuel for my run today. I am itching to get out and run after all the stress I have been under. Honestly, since Sunday night (when the S**T hit the fan) I have not had time to squeeze in a run and I am ready to take my stress out on the pavement for sure!

I also had a decaf hazelnut coffee, with half and half and cinnamon. Gotta love free work coffee!

Well it is Wednesday so you know what that means:

Things Ali Is Excited About:

    Hey Ali -

Hope things over at SU are going well- sure sounds like it!

One question for ya: I am in awe of your lunch salads as they look delicious everyday (and have so many things in them!); where do you find the time to make them? Do you make your grocery shopping lists based on stuff to throw in them? I would like to start making lunch salads but can’t seem to find the time/ingredients!

      Amanda-
Things are the same old, same old. I hope your new job is great!!!

My lunch salads are actually made out of “staples” that I always have on hand. The veggies: lettuce, tomatoes, peppers, cucumbers are things that I buy every week. Adam and I eat a lot of salad even as sides to dinner ect. I have hummus and salsa in my fridge at all times because I am obsessed with both. The other stuff you see if usually stuff I have left over from other meals and I just throw into the salad to use up. I make them at night before bed for the next day, it takes a few minutes because I cut up all the veggies on Sunday nights for the week, so it is just a matter to throwing it all together. Hope that helps…
