Busy Saturday!

Hey! I hope your weekend is going well. Mine is, but it has been busy.

Yesterday after work I met two of my friends Amy and Erica at American Craft for dinner and drinks. I haven’t actually seen Amy in over and year. I was so excited for a little girl date! American Craft was just a short train ride away from work and I relaxed on the train with my book until I arrived. Once I got there I was super impressed with the huge beer selection.

I settled on the wheat beer my friend Amy had ordered and told me was good. We have the same taste.

Amy was right, it was really good! I had two over the course of the night. We spent about 30 minutes girl talking and waiter kept coming over and we still hadn’t looked at the menu. I feel like we do that all the time, it must be so annoying for the waitstaff! Sorry :( We decided to order zucchini fritters while we looked over the list of entrees.

They came with a butter milk sauce for dipping. I had one, they were delicious! I decided to go with the veggie burger. I asked for avocado and feta as my toppings. I switched the fries for mixed greens.

The burger was great and was on a giant challah roll. I tried to eat it regular but it was too hard to bite, so after a few bites I lost the top and ate it open faced with a fork and knife. I cleaned my plate except for the bun top. The burger was really good and you could tell it was made fresh on site. There was definitely carrots and broccoli in it, I could taste them.

We chatted for a few hours about life, our marriages and work. It was great to catch up with them and laugh. At one point in the night Erica and I were laughing so hard we could not catch our breathe! By the time I got home at 10:30 I was pooped and headed right to bed.

I slept until 8 am this morning and it felt great. Once I got up I walked Oscar, changed into workout clothes and made a little breakfast. My mom and dad went to Herrietta’s Table for dinner last night and gave me some of the walnut and cranberry bread home. I was super excited to receive it when I picked OScar up last night. So for breakfast I toasted two small pieces of it and topped then with Earth Balance “butter” on the side I had two hard boiled egg whites and some grapes.

This bread was so good toasted…heaven! Once the breakfast dishes were done. I headed to 9 am Body Pump. I was so much less packed than last week, so that was good. It was a great workout :) After I finished my workout I was go, go, go! I walked a few blocks to the closest Starbucks and got a venti skinny vanilla iced coffee.

Right next door, was one of my favorite places on earth! Marathon Sports!

I popped in there to ask them about my blister and missing toenail issue. I told them my whole long story and they associates told me they were sure they could help me. They had me put on a neutral shoe and run up and down the street. It appears as if my overpronation had gotten worse since the last time I was fitted- especially in my right foot. Once they pointed it out to me, I could actually feel it in my right ankle. The associates  also thought that I needed a shoe with a wider toebox than my current ones. So they brought me out 3 pairs of stability shoes with a wider toebox and I ran in all of them. I decided on the Brooks Adrenaline. The felt the best. I am excited to run in them tomorrow morning and take then for a spin. I am really hoping that these new shoes will solve my foot problems.

After buying my running shoes, I went to the grocery store and bought some produce and a few other things we are out of and would need for the week. Once I got home, I put away all the groceries and showered quickly because I had a noon time haircut. Told you I was busy! I didn’t do anything crazy with my hair, just a trim. I haven’t gotten my hair cut since December, so I really needed it! I am thinking of cutting it much shorter after my bestie May’s wedding. We will see :)

After my haircut, I stopped at home for some lunch before getting the rest of my errands done. I made a prosciutto and fresh mozzarella sandwich with orange heirloom tomato, fresh basil, Trader Joe’s red pepper spread and fresh baked whole wheat sourdough. I also finished up the rest of the grapes.

I spent the afternoon shopping. We needed a few things for our apartment. Our bedding was 4 years old and falling apart. Adam actually threw away out comforter a last week and we have been using my parent’s old one until we found something we liked. I went out today bound and determined to find something. After going to a few different stores I finally found one!

I love it!!! I got the comforter, sheets, shams, skirt and throw pillows! Oscar is totally checking things out in this picture. He is weird about change. He will get used to it.

Other exciting buys, mini Larabars and a milk frother cup for our coffee maker :)

While watching making the bed up, I snacked on a single serving of popchips that I got in the Healthy Living Summit swag bag.

For dinner, I wanted to use the left over noodles from Thursday night. I decided I wants to make a Thai peanut noodle bowl. To make the peanut sauce I added the following ingredients to a small sauce pan:

  • 2 tablespoons of soy sauce
  • 2 tablespoons of natural peanut butter
  • 1/4 of a cup of water
  • 1 clove of garlic minced
  • 1 tablespoon of brown sugar
  • juice from half of a lemon

I heated it over medium heat stirring constantly until it was all melted.

In the meantime, I stir fried 1/2 of a small zucchini and 1 small chicken breast cubed.

Once it was browned I added the noodles and the peanut sauce.

This was really good, but much richer than I thought it would be. I could only eat half of it and then tossed the rest (I actually gave Oscar a few noodles too. He loved them!).

Well, I have no real plans tonight, but I am hoping to do something. We will see. Have a great night and I will see you all tomorrow :)

  3. The beer menu at American Craft is amazing! It rivals Deep Ellum!

    I hope you like the Brooks. I have overpronation (who knew?!) and the shoes have certainly helped.

    The bedding is beautiful! I love the light above the bed too. Looks great!

    The new bedding looks great; although what wouldn’t look good with a doxie on it? :D
