Hey everyone! I hope you day is going well. Mine is ok, still fighting this cold and still trying to cross stuff off the work to do list. This are taking longer than I thought and that is making me feel a little unproductive! Oh well, I will get it done, I always do!

Lunch today was left over eggplant rollatini my mom gave to me. I looove when I go to pick up Oscar and my mom says, “Ali, I made something you would love, here are the leftovers!” I always love it too! The woman knows me so well! She is a really good cook.These rollatinis we super healthy just eggplant (not fried, plain, no bread crumbs), sauce, fat free ricotta, egg whites and spices. I added a tad of my own sauce and heated it up at work.

This was like a veggie lasagna without the noodles. VERY GOOD! For some more veggie power a had a small side salad.

Lettuce, tomatoes, red peppers, edamame, carrots cucumbers, and the last bit of a bottle of organic balsamic dressing. I love when i get the bottom of the bottle because it is always ultra peppery! :)

During lunch, I went on to the University bookstore website to see about my books for this upcoming semester.  I am taking two classes. Can you believe I am almost back in school? Doesn’t it seem like yesterday I was studying for finals? Well, my first day back is 1/19/10! So about a week and a half! I had to buy two books, that totaled together = $ 224.00 (!!!!!!!) Um…NO! I was stressing over it! So I looked up a few websites to see if I could get them cheaper. I ended up ordering them from two different websites and the grand total was $180.29. Still too much, in my opinion, but hey, such is life!

Original Bookstore Price: $244.00

Price I got from looking around: $180.29

Difference: $43.71

Lesson: It pays (literally) to shop around!!!

Well, back to work for me! See you all at dinner!

  2. Oh I hated buying books in school! Your best bet is to buy them online and then resell them online. The school bookstore wouldn’t give me 1/8 of what I could resell it for online!

    First off – I’m a new reader to your blog and I love it! Being in grad school, working full time, etc…I can relate to your marathon days (helllooo packing meals for 12+ hours/cramming in the work out). The best place for my books is good old amazon.com. Enjoy the last 10 days without class :)

      Hey Colleen! Ugh, it is a lot, isn’t it! We must be insane to do this! I ordered one of my books off Amazon.com today the other is from Persons (I think?). Saved me a lot of cash!!! Thanks for reading!!!!

  7. omg, my dog would totally die for that popcorn. He loooves popcorn (and roast beef!) Disturbingly, I could also see my boyfriend sneaking a piece – ew!
