Hello! Can you believe tomorrow is Friday? Where the heck did this week go?! I don’t know… I am ready for the weekend for sure though
The weather today on Boston was 100% better than it has been in the past few days which means I got to enjoy a lovely walk home from work
Once I got home I downed a bunch of water and snacked on a s’mores z bar. I have never had this flavor before and I think it is my new favorite. I loved the little bits of marshmallow!
After my pre-run snack, I changed and was out the door. I had not run in a few days since we had monsoon-like weather so I was really excited to get running. The temp was great and the sun was shining. I actually had a fantastic run. I felt strong and enjoyed every step. I ran 3.86 miles in 36:28- I am getting faster!!!!!
My speed and my stamina are both coming back and it makes me happy

I called Adam to tell him about my run and he said, “You are such a happy person when you have a good run!” He is right, I am. I good run can put me in an amazing mood and a bad one can ruin my day. Today is a good day.
After my run I started dinner. Since Adam is working over time I was on my own and wanted to use up the half of the ginger soy chicken kabob from Tuesday night. Nasoya sent me some coupons to try a few of their products. Since I have already tired and LOVE their tofu and nayo. I wanted to try the chinese style noodles I have had my eye on for a while. I bought them this weekend and decided I wanted to use them tonight. I cooked the noodles by following the directions on the package.
Meanwhile, I started stir-frying some spinach, 1/2 of a small zucchini (quartered) and 1/3 of a red bell pepper chopped.
Once those veggies were tender, I cut up and added the 1/2 of the kabob I had left over and a little soy sauce and stir-fry sauce.
Once the noodles were done, I drained then and added 1/2 of them to the stir fry pan and ran cold water over the others and put them in the fridge for another time. Let’s see if I can get creative with them too
After the noodles were all mixed in I put it on a plate and called it dinner. It was a great use of leftovers
I actually only ended up eating half of this plate since the meal was so filling. I saved the rest for lunch tomorrow. The noodles were really good. This reminded me a lot of lo mein, but fresher and much less greasy. I will be buying these noodles again. I think Adam would really like them too.
After dinner, I did the dishes and had tea and cookies. I made chamomile tea and had a small bag of Annie’s cookies. They were on sale at Whole Foods this week
Probably geared towards kids for back to school, but whatever, I am a child
I enjoyed then very much!
Well, I am going to get back to reading and call it a night soon. I am sleepy! I hope you all have a great night, see you tomorrow!
