So Much Brown.

Hi everyone! Can you believe we have one more day left in the work week? Honestly, I cannot! But, I am excited for the weekend because for the first time in about 8 weeks that  I HAVE NOTHING TO DO and it feels so good. I plan on getting in a few good workouts, getting to the grocery store, writing a paper and getting some blog stuff done that I have been meaning to take care of and learn how to use my new camera :) I am hope to get a lot done this weekend, but have no actual set schedule which is so nice!

After work, I headed to class. It was fine…it’s class. After class, I opted to go home and hang out with the boys. Adam’s words from last night about, “needing to rest” stuck with me throughout the day. He also told me this morning that my body was trying to tell me something and I need to listen to my body. When you live by the phrase, “Listen to your body” and someone has to remind you to do that, it is pretty much a rude awakening. So, in light of my episode last night, I made the executive decision to take a rest day today. I do however, have a kick ass workout planned tomorrow evening…what can I say? I love it.

Oh, while in class, I got a little hungry and snacked on a banana bread larabar.

When I got home all I could think about was BAKED TOFU!!!! So, that’s what I made. I brushed some balsamic marinade on some cubed tofu and baked it at 350 for 30 minutes.

In the meantime I made some Seeds of Change Amantani.

Seeds of Change sent me a huge box of stuff a few months ago and I am slowly working through it. I have LOVED every product they have sent me and this rice was no exception. It was delicious. I love the wild rice and quinoa mix. It adds different textures. The seasonings gave it a veggie flavor which tasted really fresh. YUM YUM.

I realized that there was a lot of brown on my plate and knew I needed to add some green! So I added some steamed brussle sprouts.

Dinner:

Dessert was Trader Joe’s mini peanut butter cups. These are my crack! SO GOOD!

Well, I am off to bed. Night!

  2. It’s important to rest, girl!! And while it’s easy for me to tell you that, I have issues with it as well, so I sympathize with how difficult it can be. I devoted a whole blog post to it last night! I bet your workout toinght will feel amazing because you gave your body time to recuperate.

    I’ve been craving tofu lately too., THe past few nights I’ve been meaning to make some, but changed my mind at the last minute. Looks yummy! Glad you got some rest. I bet you feel amazing this morning!

    I think I should buy those PB cups this weekend when I’m at TJs. Then part of me thinks I shouldn’t. But the greater part of me says yes, and it will prevail!
