Squash In Lieu of Fruit?

Good afternoon! I hope your  Tuesday has been great! For some reason, by the time lunch came today I was starving!!!! Luckily, I had a really yummy lunch to look forward too :)

Lunch was a can of Amy’s minestrone soup with some kashi heart to heart crackers and a laughing cow. Whenever I have this lunch, I always have a piece of fruit on the side. Today, instead of  fruit I had this:

Yesterday when I was at my mom and dad’s house, they were eating a roast beef dinner. When they were cleaning the table there was a little squash left and they asked if I wanted to take it. Fresh steamed and mashed squash…yes please!!!!! I had it in lieu of the fruit today. I topped it with a little bit of the cinnamon from my desk draw and it was perfect! Thanks, Mom and Dad!

Lunch:

After lunch I was stuffed!!! Sigh…mo much better.

Ask Me Anything Questions for this post:

Q: What type of shoes do you work out in? Do you run and Body Pump in the same ones? How often do you have to replace them?

A: Great question! I run in Sacony ProGrid Guide 2’s. You can see my post about buying new running shoes from October here. I used to use Nike Shox when strength training as not to wear out my runners, but in the recent weeks I have felt that they have a lack of support and have caused a little knee pain. So for the last few weeks I have been using the same shoes for everything and my knee pain is gone (!!!!!!!). I replace them every 6 months usually, I can feel it in my body when it is time to replace them. I get a little shin and knee discomfort and that is my sign to replace them. I recommend, to first time runners, getting your foot fitted for running shoes. For Boston readers, go to Marathon Sports and ask them to fit you, it is totally free and you will feel the difference when you have the right shoe. For those out of state or out of the country, I am sure that there is a place just like Marathon Sports that will fit you. Just Google it.

Q: How did you learn to eat healthy and well-balanced? Did you go to a nutritionist or did you do your own research? Do you have any websites or books that you recommend about nutrition etc.?

A: I have never been to a nutritionist, although I am sure I could benefit from it :) I actually read a lot of blogs and did A LOT of research on my own. I don’t think I could recommend a specific site (other than the blogs on my blogroll) that I feel really helped. You just have to be willing to get in there and Google, Google, Google. There is a huge learning curve  with most people when they try to change their lifestyle, so you need to do a lot of research. I would also say that experimenting in the kitchen helped me learn how to make the no-so-healthy foods I love healthier. Don’t be afraid to try something new when cooking, worst case- it is gross (I have been there), best case – it is you new favorite recipe (I have been there too)!

Q: Do you wear your engagement ring all the time? I’ve noticed you don’t wear it in some pictures, so I was just curious!

P.S. Your ring is beautiful!!

A: I wear my ring allll the time and never take it off unless it is being cleaned or sized (I had to have it re-sized after I lost the weight). If you don’t see it in pictures, maybe it is because the picture is of my right hand? Not sure. I sleep with it, run with it, shower with it, everything…I never take it off!

Thanks! I think it is one of the most beautiful things I have ever seen. I have had it for over a year now and still stare at it! Adam picked it out all by himself and did a great job!!!

    The idea of eating mashed yellow squash actually makes me shudder. My parents went through a “we are farmers” phase when I was a kid and they were always trying to get me to eat yellow squash. I think I’m traumatized.
